- 1 pound lean ground beef
- 1 tablespoon olive oil
- 1 small yellow onion finely diced
- 2 cloves garlic minced
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- ½ teaspoon salt adjust to taste
- ¼ teaspoon black pepper
- 2½ cups beef broth
- 1 cup milk
- 2 cups uncooked elbow macaroni or small shells
- 1½ cups shredded cheddar cheese
- 1 teaspoon cornstarch optional, for thickening
Heat olive oil in a large deep skillet over medium heat.
Add ground beef and diced onion. Cook until beef is browned, breaking it apart as it cooks.
Stir in garlic and cook for 30 seconds until fragrant.
Add tomato paste, paprika, salt, and black pepper. Stir until well combined.
Pour in beef broth and milk, then add uncooked pasta. Stir gently.
Bring to a light simmer, cover, and cook for 10–12 minutes, stirring occasionally, until pasta is tender.
Reduce heat to low and stir in shredded cheddar cheese until melted and creamy.
If needed, simmer uncovered for a few minutes to thicken or stir in a cornstarch slurry.
Remove from heat and let rest for 5 minutes before serving.
