Preparation

  • Start by washing, peeling, and pitting your ripe peaches. Cut them into chunks and add them to a large bowl.
  • Sprinkle the peach chunks with sugar and lemon juice. Allow this mixture to sit for about 30 minutes to help the peaches release their natural juices.
  • Transfer the macerated peaches into a blender or food processor and blend until smooth, leaving a few chunks intact for texture if desired.
  • In a separate large bowl, combine the peach puree with heavy cream, whole milk, vanilla extract, and a pinch of salt. Stir well to incorporate.
  • Cover the mixture and refrigerate for at least 2 hours to enhance flavor and texture.

Churning

  • Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions, typically for about 20-25 minutes until it reaches a soft-serve consistency.
  • For a firmer texture, transfer the ice cream to an airtight container and freeze for about 4 hours before serving.

Notes

For the best results, use ripe peaches and don't skip the chilling step to avoid grainy texture. You can fold in mix-ins like cookies or nuts post-churning.
