- 2 cups broccoli florets
- 1½ cups zucchini chopped
- 4 –5 cups vegetable broth low sodium
- ½ teaspoon salt or to taste
- ¼ teaspoon black pepper
- ½ teaspoon dried thyme or parsley optional
- 3 cups spinach or kale stems removed
- 1 –2 tablespoons fresh lemon juice
Heat olive oil in a large soup pot or Dutch oven over medium heat.
Add diced onion and celery; cook 4–5 minutes until softened.
Stir in garlic and ginger; cook 30 seconds until fragrant.
Add broccoli and zucchini, stirring to coat with aromatics.
Pour in vegetable broth and season lightly with salt and pepper.
Bring to a gentle boil, then reduce to a simmer.
Simmer for 15–20 minutes until vegetables are fork-tender.
Add spinach or kale and cook 2–3 minutes until wilted.
Blend using an immersion blender until smooth (or desired texture).
Remove from heat, stir in lemon juice, adjust seasoning, and rest 5 minutes before serving.
