  • 4 large Fresh Lemons Organic lemons are recommended for better flavor.
  • 2 cups Granulated Sugar Adjust according to your taste preference.
  • 1 cup Water Essential for cooking down the ingredients.
  • 1 tablespoon Pectin (optional) Use if a thicker jam is desired.

Instructions
 

Preparation

  • Thoroughly wash your lemons to remove any wax or pesticides. You can also soak them in vinegar water for added cleaning.
  • Zest and juice the lemons, separating the peel from the pulp.

Cooking

  • In a heavy-bottomed pot, combine the lemon juice, zest, sugar, and water. Stir everything together until well mixed.
  • Bring the mixture to a boil over medium-high heat while constantly stirring to dissolve the sugar.
  • Once boiling, reduce the heat to a simmer and cook for 15-30 minutes, checking for desired consistency.
  • To test if the jam is set, place a small spoonful on a plate and let it cool for a minute. Run your finger through it; if it holds its shape, it's ready!
  • Once your jam has reached the desired consistency, pour it into sterilized jars while still hot. Close the lids tightly and let them cool at room temperature.

Notes

Cool completely and store in a cool, dark place. Can last up to a year unopened. Once opened, keep in the fridge for up to a month.
