Ingredients

  • ½ cup water

  • Ice if using ice bath method
  • Plastic wrap

Instructions
 

  • Prepare the Kiwi:
  • Peel and chop the kiwis into small pieces.
  • Add to a blender or food processor.
  • Make Simple Syrup:
  • In a small saucepan, combine sugar and water.
  • Heat over medium, stirring until sugar dissolves (about 3–4 minutes).
  • Remove from heat and let cool completely.
  • Blend:
  • Add cooled syrup and lime juice to the blender with kiwi.
  • Blend until completely smooth.
  • Taste and adjust sweetness if needed.
  • Optional: Strain through a fine mesh sieve to remove seeds for extra smooth texture.
  • Freeze – Ice Cream Maker Method:
  • Pour mixture into ice cream maker.
  • Churn according to manufacturer’s instructions (20–25 minutes).
  • Transfer to container and freeze 1–2 hours to firm.
  • Freeze – No Ice Cream Maker Method:
  • Pour mixture into a shallow freezer-safe dish.
  • Freeze for 1 hour.
  • Stir with a fork to break up ice crystals.
  • Repeat every 30 minutes for 2–3 hours until smooth and scoopable.
  • Serve:
  • Let sit at room temperature for 5–10 minutes before scooping.
  • Garnish with kiwi slices or fresh mint if desired.

Notes

  • Use ripe, slightly soft kiwis for best flavor.
  • Simple syrup prevents icy texture.
  • Blend thoroughly to avoid fibrous texture.
  • Store in airtight container up to 2 weeks.
  • Press plastic wrap directly on surface to reduce ice crystals.
  • Do not refreeze after fully melting.
