  • 1 cup pearl couscous (also called Israeli couscous)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium lemon (both zest and juice)
  • 2 cups vegetable or chicken broth
  • Salt and pepper to taste

Preparation

  • In a medium-sized pot, heat the butter and olive oil over medium heat until melted and fragrant.
  • Add the pearl couscous to the pot and sauté it, stirring occasionally, until it’s lightly golden and has a nutty aroma, about 3 minutes.
  • Pour in the vegetable or chicken broth, and bring the mixture to a boil.
  • Once it’s boiling, reduce the heat to low, cover, and let it simmer for about 10-12 minutes or until the couscous has absorbed the liquid.
  • Remove the pot from heat. Stir in the freshly squeezed lemon juice and zest, and season with salt and pepper to taste.
  • Serve the couscous warm, garnished with fresh herbs to enhance the flavor and presentation.

Notes

Take your time to toast the couscous for a deeper flavor. Always taste and adjust the seasoning before serving. You can customize the dish by adding roasted vegetables, grilled chicken, or feta cheese.
