- 1 cup milk dairy, almond, oat, or coconut
- ¼ cup Greek yogurt
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 –2 tablespoons honey or maple syrup
- ½ teaspoon vanilla extract
- Pinch of salt
- Optional Toppings:
- Fresh berries
- Extra yogurt
- Toasted coconut
- Drizzle of honey
In a medium bowl or jar, whisk together milk and Greek yogurt until smooth.
Add lemon juice, lemon zest, honey (or maple syrup), vanilla extract, and salt. Whisk well.
Stir in chia seeds until evenly distributed.
Let sit for 5 minutes, then stir again to prevent clumping.
Cover and refrigerate for at least 2 hours, or overnight, until thickened.
Stir before serving and add desired toppings.
