Ingredients
  

  • pounds chicken breast or thighs cut into bite-sized pieces
  • 1 tablespoon olive oil or butter
  • 1 small onion finely diced
  • 4 cloves garlic minced
  • ½ cup sun-dried tomatoes drained and chopped
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes optional
  • 5 cups chicken broth
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • 2 cups fresh spinach roughly chopped
  • Salt and black pepper to taste

Instructions
 

  • Heat olive oil or butter in a large pot or Dutch oven over medium heat.
  • Season chicken lightly with salt and pepper. Add to the pot and cook until lightly golden on the outside, about 3–4 minutes. Remove and set aside.
  • In the same pot, add diced onion and cook until soft and translucent, about 3–4 minutes.
  • Stir in garlic and cook for 30 seconds until fragrant.
  • Add sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using).
  • Pour in chicken broth and bring to a gentle simmer.
  • Return chicken to the pot and simmer for 10–12 minutes, until fully cooked and tender.
  • Reduce heat to low and stir in heavy cream and Parmesan cheese until smooth and creamy.
  • Add spinach and cook for 1–2 minutes until wilted.
  • Taste and adjust seasoning. Let rest a few minutes before serving.

Notes

  • Do not boil the soup after adding cream to prevent curdling.
  • Sun-dried tomatoes are essential for the signature “Marry Me” flavor.
  • Add extra broth if the soup thickens too much as it sits.
  • This soup tastes even better the next day.
