Ingredients
  

  • 1 cup water
  • ½ cup unsalted butter
  • ½ teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs room temperature
  • 1 teaspoon fresh garlic minced or finely grated
  • 1 cup shredded cheese Parmesan, Gruyère, or sharp cheddar
  • ¼ teaspoon black pepper optional

Instructions
 

  • Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
  • In a medium saucepan, combine water, butter, and salt over medium heat. Bring to a boil.
  • Reduce heat to low and add flour all at once. Stir vigorously until a smooth dough forms.
  • Cook dough 1–2 minutes, stirring constantly, until it pulls away from the pan.
  • Remove from heat and cool 2–3 minutes.
  • Beat in eggs one at a time, mixing well after each addition, until dough is smooth and glossy.
  • Stir in garlic, shredded cheese, and black pepper.
  • Scoop dough onto prepared baking sheet, spacing evenly.
  • Bake 20–25 minutes, until puffed and golden.
  • Cool 5 minutes before serving.

Notes

  • Do not open the oven early—steam is key for puffing.
  • Eggs must be fully incorporated for a light texture.
  • Underbaking can cause soggy centers.
