- 2 cups cooked shredded chicken
- 1 can 15 oz black beans (drained and rinsed)
- 1 cup corn fresh, frozen, or canned
- 1 can 10 oz diced tomatoes with green chilies
- 1 cup salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups shredded cheese cheddar or Mexican blend
- 6 –8 small tortillas corn or flour
Preheat oven:
Preheat oven to 375°F (190°C) and grease a baking dish.
Prepare filling:
In a large bowl, mix shredded chicken, black beans, corn, diced tomatoes, salsa, and spices until well combined.
Layer the casserole:
