Ingredients
  

Muffin Base

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg Use room temperature for fluffier texture.
  • 1/2 cup milk Use room temperature for fluffier texture.

Toppings

  • 1 cup shredded cheese (mozzarella, cheddar, or your favorite)
  • 1/2 cup pizza sauce Plus more for serving.
  • 1/2 cup pepperoni slices Or any toppings you prefer.
  • 1/2 teaspoon Italian seasoning Optional for added flavor.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a mini muffin pan or line it with paper liners.
  • In a bowl, whisk together the flour, baking powder, baking soda, salt, and Italian seasoning.
  • In another bowl, beat the egg, then mix in the milk and pizza sauce.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  • Gently mix in the cheese and pepperoni until evenly distributed.
  • Scoop the batter into the prepared muffin pan, filling each cup about 3/4 full.

Baking

  • Place in the oven and bake for 15-20 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  • Let them cool for a few minutes before popping them out of the pan.

Serving

  • Serve warm with extra pizza sauce for dipping.

Notes

These muffins are customizable, and can be made with different toppings and cheeses. Store in an airtight container at room temperature for up to 3 days, refrigerate for a week, or freeze for up to 3 months.
