Crust

  • 1 cup Crushed graham crackers Mixed with melted coconut oil or butter
  • 3 tablespoons Coconut oil or melted butter For binding the crust

Cheesecake Filling

  • 8 ounces Low-fat or fat-free cream cheese Cream cheese for reduced calories
  • 1 cup Greek yogurt For added creaminess and protein
  • 1 scoop Protein powder Vanilla or chocolate flavored
  • 1/4 cup Sweetener Options include stevia, erythritol, or honey
  • 1 teaspoon Vanilla extract Enhances flavor

Preparation

  • Step 1: Preheat your oven to 325°F (160°C).
  • Step 2: In a small bowl, combine crushed graham crackers with melted coconut oil or butter. Press this mixture into the bottom of mini muffin tins or silicone cupcake molds.
  • Step 3: In a mixing bowl, combine cream cheese, Greek yogurt, protein powder, sweetener, and vanilla extract. Blend until smooth and creamy.
  • Step 4: Spoon the cheesecake filling over the prepared crusts in the muffin tins, filling each cup to the top.

Baking and Cooling

  • Step 5: Bake for about 20-25 minutes or until the edges are firm with a slight jiggle in the center.
  • Step 6: Allow the cheesecakes to cool at room temperature before transferring them to the refrigerator. Chill for at least 2 hours before serving.

Notes

Avoid overmixing the filling to prevent density. Add toppings just before serving for freshness. Variations include chocolate, fruit fillings, or nutty flavors. Store leftovers in airtight container; they last up to a week.
