Ingredients
  

For Mint Ice Cream

  • 2 cups Fresh mint leaves About 2 cups
  • 2 cups Heavy cream
  • 1 cup Whole milk
  • 3/4 cup Sugar
  • 4 pieces Egg yolks
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

For Salted Watermelon Granita

  • 4 cups Ripe watermelon, diced About 4 cups
  • 1/4 cup Sugar Adjust based on sweetness
  • 1 juice of Fresh lime From 1 lime
  • 1/2 teaspoon Sea salt
  • to taste Mint leaves for garnish Optional

Instructions
 

Making Mint Ice Cream

  • In a saucepan, combine the heavy cream, milk, and sugar over medium heat until it begins to steam.
  • Add fresh mint leaves and let it steep for about 30 minutes.
  • In a separate bowl, whisk together the egg yolks.
  • Slowly pour the warm mint-infused mixture into the egg yolks, stirring constantly to temper the eggs.
  • Return the mixture to the saucepan and cook over low heat until it thickens, about 10 minutes.
  • Strain the mixture to remove the mint leaves. Stir in the vanilla extract and a pinch of salt.
  • Let it cool at room temperature before transferring to the fridge to chill for at least 4 hours.
  • Once chilled, pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions.
  • Transfer to a container and freeze for at least 4 hours to firm up.

Making Salted Watermelon Granita

  • In a blender, combine the diced watermelon, sugar, and lime juice. Blend until smooth.
  • Taste the watermelon puree and add sea salt, mixing to ensure a well-rounded sweetness.
  • Pour the mixture into a shallow pan and place it in the freezer.
  • After about 1 hour, use a fork to scrape and fluff the mixture. Repeat every 30 minutes until fluffy, about 3-4 hours.
  • Once ready, scoop the granita into bowls and garnish with mint leaves if desired.

Notes

Use fresh mint for best flavor; chill your mixture thoroughly for a creamier texture; don’t skip the salt in the granita to enhance the watermelon sweetness.
