Preparation

  • Preheat your oven to 425°F (220°C) and grease your ramekins with butter, placing them on a baking sheet for stability.
  • In a microwave-safe bowl, combine the dark chocolate and butter. Microwave for 30 seconds, stir, and repeat until smooth. Avoid overheating.
  • Stir the powdered sugar into the chocolate-butter mixture until well combined.
  • Whisk in the eggs and egg yolks thoroughly, ensuring the mixture gets nice and fluffy.
  • Gently fold in the flour and salt until just combined, being careful not to overmix.
  • Evenly distribute the batter into your prepared ramekins, filling each about ¾ full.

Baking

  • Bake for 12-14 minutes, or until the edges are firm but the centers are still slightly soft.
  • Let the cakes sit for one minute after baking, then carefully invert them onto plates.
  • Serve with a dusting of powdered sugar or a scoop of vanilla ice cream.

Notes

Do not overbake, as this will transform the cakes into regular chocolate cakes rather than retaining the molten center. You can prepare the batter ahead of time and chill it in the fridge for up to 24 hours.
