  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon optional

  • 2 tbsp ground flaxseed or chia seeds
  • ¼ cup unsweetened coconut flakes
  • 1 –2 tbsp protein powder vanilla or unflavored

Instructions

  • Prep
  • Line a baking sheet or plate with parchment paper. Measure all ingredients. Stir natural peanut butter well before using.
  • Mix wet ingredients
  • In a large bowl, combine peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth.
  • Add dry ingredients
  • Mix in rolled oats, flaxseed or chia seeds, cinnamon, and salt until fully combined.
  • Fold in chocolate chips
  • Gently fold in chocolate chips last.
  • Check texture
  • The mixture should be soft and hold together when pressed.
  • Too dry? Add 1 tbsp honey or peanut butter.
  • Too wet? Add 1–2 tbsp oats.
  • Shape
  • Scoop about 1 tablespoon per bite and roll into balls.
  • Chill
  • Refrigerate for 20–30 minutes to firm up before storing.

Notes

  • Old-fashioned oats give the best chewy texture—avoid quick oats.
  • Chilling helps the bites hold their shape and improves texture.
  • Adjust sweetness to taste before rolling.
