  • 1 large watermelon Seedless is best

Cream Filling

  • 1 cup mascarpone cheese
  • 1/2 cup Greek yogurt For a tangy kick
  • 2 tablespoons honey or maple syrup Adjust for sweetness

  • Fresh mint leaves For garnish and flavor
  • Optional toppings: crushed nuts, coconut flakes, or chocolate chips

Preparation

  • Cut the watermelon in half and scoop out the flesh carefully, keeping the rind intact to use as a bowl.
  • In a mixing bowl, combine mascarpone cheese, Greek yogurt, honey (or maple syrup), and a pinch of salt. Mix until smooth and well blended.
  • Spoon the creamy mixture back into the watermelon halves, aiming for an even fill to create a beautiful presentation.
  • Place the filled watermelon halves in the refrigerator for at least 2 hours to meld flavors and chill.
  • Just before serving, garnish with fresh mint leaves and any optional toppings you desire, and slice into wedges.

Notes

Choose a ripe, heavy watermelon for the best flavor. You can prepare the filling a day earlier; just assemble the final dessert before serving. Experiment with flavors by adding lime zest or vanilla extract.
