Ingredients

  • pounds boneless skinless chicken breasts, cut into bite-size pieces
  • 16 ounces potato gnocchi shelf-stable or refrigerated
  • 1 cup baby spinach optional
  • Seasoning & Sauce Base:
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Optional Garnish:
  • Fresh parsley
  • Red pepper flakes
  • Extra Parmesan

Instructions
 

  • Season the Chicken
  • Pat chicken dry and season with salt, pepper, paprika, and Italian seasoning.
  • Cook the Chicken
  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken and cook for 5–7 minutes until golden brown and cooked through (internal temperature 165°F).
  • Remove chicken from skillet and set aside.
  • Build the Sauce
  • Reduce heat to medium.
  • Add minced garlic and cook for 30 seconds until fragrant.
  • Pour in chicken broth and scrape up any browned bits from the pan.
  • Stir in heavy cream and bring to a gentle simmer.
  • Cook the Gnocchi
  • Add uncooked gnocchi directly into the skillet.
  • Simmer for 5–7 minutes, stirring occasionally, until gnocchi are tender and sauce thickens.
  • Finish the Dish
  • Stir in Parmesan cheese until melted and smooth.
  • Return cooked chicken to the pan.
  • Add spinach and cook 1–2 minutes until wilted.
  • Adjust seasoning as needed.
  • Rest & Serve
  • Let rest for 2–3 minutes to thicken slightly.
  • Garnish with parsley, extra Parmesan, and red pepper flakes if desired.
  • Serve warm.

Notes

  • No need to pre-boil gnocchi—it cooks directly in the sauce.
  • If sauce is too thick, add a splash of broth or milk.
  • If sauce is too thin, simmer a few extra minutes.
  • Avoid boiling the sauce rapidly; keep it at a gentle simmer.
  • Store leftovers in an airtight container for up to 3 days.
  • Reheat gently with added broth or milk to restore creaminess.
