  • 3 cups fresh baby spinach
  • ½ cup sun-dried tomatoes drained and sliced

  • 1 cup heavy cream
  • ¾ cup chicken broth
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • ½ cup freshly grated Parmesan cheese

  • Salt and black pepper to taste

Instructions
 

  • Prep the Chicken
  • Pat chicken dry with paper towels.
  • Season both sides with salt, black pepper, and Italian seasoning.
  • Sear the Chicken
  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken and sear for 5–6 minutes per side until golden.
  • Remove chicken from pan and set aside.
  • Build the Sauce
  • Reduce heat to medium.
  • Add garlic and sauté for 30 seconds until fragrant.
  • Pour in chicken broth, scraping up browned bits from the pan.
  • Stir in heavy cream and Parmesan cheese until smooth.
  • Add Tuscan Elements
  • Stir in sun-dried tomatoes and simmer for 3–4 minutes.
  • Add spinach and cook until wilted.
  • Finish Cooking
  • Return chicken to the skillet.
  • Simmer for 5 minutes, until chicken reaches 165°F internally and sauce thickens.
  • Rest & Serve
  • Remove from heat and rest for 5 minutes.
  • Garnish with extra Parmesan or fresh basil if desired.
