One-Pan Ground Beef and Potatoes Skillet

This One-Pan Ground Beef and Potatoes Skillet is an easy, hearty dinner made with seasoned ground beef, tender potatoes, and simple pantry spices. Everything cooks in one pan for a budget-friendly, comforting meal with minimal cleanup—perfect for busy weeknights.

Ingredients
  

  • 1 lb lean ground beef
  • lb potatoes Russet or Yukon Gold, diced small
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • ½ tsp paprika
  • 1 tsp Italian seasoning
  • ¾ tsp salt adjust to taste
  • ½ tsp black pepper
  • ¼ –½ cup beef broth or water
  • 1 cup shredded cheddar or Colby Jack cheese optional
  • Fresh herbs for garnish optional

Instructions
 

  • Cook potatoes: Heat olive oil in a large skillet over medium heat. Add diced potatoes in an even layer. Season lightly with salt and pepper. Cook 8–10 minutes, stirring occasionally, until lightly browned and starting to soften.
  • Add aromatics: Stir in chopped onion and cook 2–3 minutes until fragrant. Add garlic and cook 30 seconds.
  • Brown beef: Push potatoes to one side of the skillet. Add ground beef to the empty side and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
  • Season & simmer: Stir everything together. Add paprika, Italian seasoning, salt, and black pepper. Pour in beef broth or water. Cover and cook 8–10 minutes, stirring once or twice, until potatoes are fork-tender.
  • Finish: Turn off heat. Sprinkle cheese on top if using, cover 2–3 minutes to melt, then serve.

Notes

  • Dice potatoes small and evenly so they cook at the same rate.
  • Keep the skillet covered during simmering to help steam the potatoes.
  • Add a splash of broth when reheating to keep the skillet moist.
