- 1 lb boneless skinless chicken thighs or breasts
- 1 cup long-grain white rice rinsed
- 1 small onion diced
- 1 cup BBQ sauce
- 2 cups chicken broth
- 2 cloves garlic minced
- 1 teaspoon smoked paprika
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- Salt to taste
- Optional: chopped parsley or green onions
Rinse rice under cold water until clear.
Heat olive oil in a large pot over medium heat.
Add chicken and cook 4–5 minutes until lightly browned, then remove.
In the same pot, cook diced onion for 2–3 minutes until soft.
