Ingredients

For the Pasta

  • 8 oz. spaghetti Any pasta shape can be used.

For the Sauce

  • 2 tablespoons olive oil For sautéing.
  • 1 cup onion (chopped) Chop finely.
  • 6 cloves garlic (minced) Use fresh garlic for best flavor.
  • 14 oz. fresh tomatoes (diced) Fresh is preferred over canned.
  • 2 cups chicken broth Can substitute with vegetable broth for vegetarian version.
  • 1 tablespoon chopped Italian basil Fresh basil enhances flavor.
  • 1/4 teaspoon salt (or to taste) Adjust according to preference.
  • 1/4 cup shredded Parmesan cheese For creaminess.
  • 1 tablespoon chopped Italian parsley For garnish.

Instructions

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook for about 3-4 minutes until it becomes translucent.
  • Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Cooking

  • Toss in the diced tomatoes and chopped Italian basil. Stir well and let it cook for about 5 minutes, allowing the tomatoes to soften.
  • Add the chicken broth to the pot and bring it to a gentle boil.
  • Once boiling, add the spaghetti. Stir occasionally and let it cook for around 10-12 minutes until the pasta is al dente.
  • Once cooked, season with salt and stir in the shredded Parmesan cheese. Remove it from the heat and let it sit for a couple of minutes.

Serving

  • Sprinkle with chopped Italian parsley for a fresh kick. Serve warm and enjoy!
