Ingredients
  

  • 12 oz pasta rotini, penne, or bowtie
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber chopped
  • 1/2 cup red onion thinly sliced
  • 1/2 cup olives sliced
  • 1/2 cup feta cheese crumbled
  • For the dressing:
  • 1/3 cup olive oil
  • 2 tablespoons vinegar apple cider
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions
 

  • Cook the pasta:
  • Bring salted water to a boil. Cook pasta according to package instructions. Drain and rinse under cold water to cool.
  • Prepare ingredients:
  • Chop vegetables, slice onion and olives, and crumble feta cheese.
  • Make the dressing:
  • In a bowl, whisk together olive oil, vinegar, Dijon mustard, Italian seasoning, salt, and pepper.
  • Combine:
  • In a large bowl, add cooled pasta and prepared ingredients. Pour dressing over and toss until evenly coated.
  • Chill and serve:
  • Refrigerate for at least 30 minutes before serving to allow flavors to blend.

  • Salt pasta water well for better flavor.
  • Cook pasta al dente to prevent mushy texture.
  • Use fresh, crisp vegetables for best results.
  • Add extra dressing if the salad becomes dry after chilling.
