Ingredients
  

  • 2 cups fresh peaches peeled, diced
  • 2 sheets pie dough chilled
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon optional
  • 1 egg for egg wash
  • Powdered sugar for glaze
  • 1 –2 tablespoons milk for glaze

Instructions
 

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Roll out pie dough and cut into equal rectangles (about 3x4 inches).
  • In a saucepan, cook peaches, sugar, lemon juice, and cornstarch over medium heat for 5–7 minutes until thick. Stir in vanilla and cinnamon, then cool.
  • Spoon filling onto half of the rectangles, leaving space at the edges.
  • Place remaining dough on top and seal edges with a fork.
  • Brush tops with egg wash and poke small holes.
  • Bake for 20–25 minutes until golden brown.
  • Let cool slightly.
  • Mix powdered sugar and milk to make glaze, then drizzle over pop tarts.

Notes

  • Do not overfill to prevent leaking.
  • Seal edges היטב to keep filling inside.
  • Keep dough chilled for easier handling.
  • Let filling cool before assembling.
  • Bake until fully golden for best texture.
