  • Peel, pit, and slice the ripe peaches.
  • Make simple syrup:
  • In a saucepan, combine sugar and water. Heat until sugar fully dissolves, then let it cool.
  • Blend ingredients:
  • Add peaches, cooled syrup, and lemon juice to a blender. Blend until completely smooth.
  • Chill the mixture:
  • Refrigerate for 1–2 hours to improve texture and freezing.
  • Freeze the sorbet:
  • With ice cream maker: Churn according to machine instructions.
  • Without machine: Freeze in a shallow dish, stirring every 30 minutes for 2–3 hours.
  • Serve:
  • Scoop and enjoy once smooth and frozen. Let sit a few minutes before serving if too firm.
