- Cake Batter:
- 1 cup 2 sticks unsalted butter, softened
- 1 ¾ cups granulated sugar
- 4 large eggs room temperature
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup crushed pineapple slightly drained (reserve 1–2 tablespoons juice)
- ½ cup coconut milk
- 1 cup sweetened shredded coconut
- 1 teaspoon vanilla extract
- ½ teaspoon coconut extract optional
- 1 tablespoon reserved pineapple juice
- Optional Glaze:
- 1 cup powdered sugar
- 2 –3 tablespoons pineapple juice or coconut milk
Preheat oven to 325°F (163°C).
Grease and flour a 9x5-inch loaf pan or bundt pan.
In a large bowl, beat softened butter and sugar for 3–4 minutes until light and fluffy.
Add eggs one at a time, mixing well after each addition.
Mix in vanilla extract, coconut extract (if using), and reserved pineapple juice.
In a separate bowl, whisk together flour, baking powder, and salt.
Alternate adding dry ingredients and coconut milk to the butter mixture, beginning and ending with flour. Mix until just combined.
Gently fold in crushed pineapple and shredded coconut.
Pour batter into prepared pan and smooth the top.
Bake for:
70–80 minutes (loaf pan)
60–75 minutes (bundt pan)
Cake is done when a toothpick inserted in the center comes out clean.
Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
