  • 1 pound boneless skinless chicken breasts, diced Diced into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

For the Pineapple Salsa

  • 1 cup fresh pineapple, finely diced Can use canned pineapple if necessary
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice

For Serving

  • 8 small corn or flour tortillas Lightly toasted

Preparation

  • In a bowl, mix the diced chicken with olive oil, smoked paprika, chili powder, garlic powder, and salt. Let it marinate for at least 15 minutes for maximum flavor.

Cooking

  • Heat a skillet over medium-high heat and add the marinated chicken. Cook for about 8-10 minutes, or until the chicken is fully cooked and golden brown.

Making the Salsa

  • In a separate bowl, combine the finely diced pineapple, red onion, cilantro, and lime juice. Stir well to mix everything together.

Warming the Tortillas

  • Lightly toast the tortillas in another skillet for about 30 seconds on each side until warm and pliable.

Assembling the Tacos

  • Place a generous spoonful of the cooked chicken on each tortilla, followed by the fresh pineapple salsa.
  • Serve immediately, garnished with extra cilantro if desired.
