For the filling

  • 2 cups fresh or canned pineapple, chopped If using fresh, ensure it’s ripe for the best flavor.
  • 1 tablespoon lemon juice For acidity to balance the sweetness.
  • 1 tablespoon sugar For marinating the pineapple.

For the crumble

  • 1.5 cups all-purpose flour Essential for the crumble and base.
  • 0.5 cups brown sugar Adds moisture and a rich caramel flavor.
  • 0.75 cups rolled oats Gives great texture to the crumble.
  • 1 teaspoon baking powder Helps the bars rise slightly.
  • 0.5 cups unsalted butter, cold and cubed Use for better control over saltiness.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  • If using fresh pineapple, peel, core, and chop it into small pieces. Combine the pineapple with lemon juice and a tablespoon of sugar in a bowl and set aside to marinate.

Making the Crumble

  • In a separate bowl, mix together flour, oats, brown sugar, and baking powder.
  • Cut in the cold butter until the mixture resembles coarse crumbs.

Assembly and Baking

  • Press half of the crumble mixture firmly into the bottom of your prepared baking dish.
  • Spread the marinated pineapple over the crust, and top with the remaining crumble mixture.
  • Place the dish in the preheated oven and bake for about 30-35 minutes, or until the topping is golden brown.
  • Allow the bars to cool completely in the dish before slicing.

Notes

For variations, consider adding shredded coconut, mixing in berries, or making a gluten-free version with suitable flour. Store at room temperature for up to two days, in the fridge for a week, or freeze for three months.
