  • 2 cans 15 oz each white beans (cannellini or great northern), drained and rinsed
  • 1 whole head of garlic
  • 1 tablespoon olive oil for roasting garlic
  • Juice of 1 lemon
  • 2 –3 tablespoons extra virgin olive oil for blending
  • Seasonings
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme or rosemary optional
  • 1 –2 tablespoons water as needed for texture
  • Optional Garnishes
  • Fresh parsley
  • Red pepper flakes
  • Drizzle of olive oil
  • Lemon zest

Instructions
 

  • Preheat Oven
  • Preheat oven to 400°F (200°C).
  • Prepare Garlic
  • Slice the top off the head of garlic to expose the cloves.
  • Drizzle with 1 tablespoon olive oil.
  • Wrap loosely in foil.
  • Roast Garlic
  • Roast for 30–35 minutes until cloves are soft and golden.
  • Let cool slightly.
  • Blend Dip
  • Squeeze roasted garlic cloves into a food processor.
  • Add white beans, lemon juice, olive oil, salt, and pepper.
  • Blend until smooth, scraping down sides as needed.
  • Adjust Texture
  • Add 1–2 tablespoons water if needed for a thinner consistency.
  • Blend for at least 1 full minute for ultra-creamy texture.
  • Taste & Adjust
  • Adjust salt, lemon juice, or herbs as needed.
  • Serve
  • Transfer to a serving bowl.
  • Drizzle with olive oil and garnish as desired.
  • Let sit 10–15 minutes before serving for best flavor.
