Ingredients
  

  • 6 cups Rice Krispies cereal
  • 10 oz mini marshmallows
  • 3 tablespoons butter
  • 2 cups shredded sweetened coconut toasted
  • 11 oz soft caramels unwrapped
  • 3 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • Nonstick spray or parchment paper
  • Pinch of salt optional

Instructions
 

  • Line a 9x13-inch pan with parchment paper or lightly grease it.
  • Toast coconut in a skillet over medium heat for 3–5 minutes until golden; set aside.
  • In a large pot, melt butter over low heat.
  • Add marshmallows and stir until fully melted and smooth.
  • Remove from heat and stir in vanilla extract and salt.
  • Quickly fold in Rice Krispies cereal and mix until evenly coated.
  • Press mixture firmly into prepared pan using a spatula or greased hands.
  • Let cool for 10–15 minutes.
  • In a saucepan, melt caramels with cream over low heat, stirring until smooth.
  • Mix toasted coconut into caramel mixture.
  • Spread caramel-coconut layer evenly over the cereal base.
  • Melt chocolate chips in microwave in 30-second intervals, stirring each time.
  • Drizzle melted chocolate over the top.
  • Let set for 20–30 minutes, then slice into squares and serve.

Notes

  • Use low heat when melting marshmallows to keep the texture soft and chewy.
  • Grease hands or spatula to prevent sticking when pressing mixture.
  • Stir coconut constantly while toasting to avoid burning.
  • Add a splash of cream if caramel becomes too thick.
