Ingredients
  

For the Burger Sauce

  • ½ cup mayo
  • ¼ cup ketchup
  • 1 tablespoon dill pickles (chopped)
  • ½ teaspoon garlic powder
  • ½ teaspoon pickle juice
  • ½ teaspoon soy sauce
  • ½ teaspoon rice vinegar
  • ¼ teaspoon paprika
  • ¼ teaspoon kosher salt
  • teaspoon ground black pepper

For the Burgers

  • 1 pound ground beef (80/20) Choose quality meat for better flavor
  • ¾ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 6 slices American cheese

For Serving

  • 6 pieces flour tortillas (street taco size)
  • to taste shredded lettuce
  • to taste burger pickles
  • optional white onions Optional toppings

Instructions
 

Preparation

  • In a small bowl, mix together the mayo, ketchup, chopped dill pickles, garlic powder, pickle juice, soy sauce, rice vinegar, paprika, kosher salt, and ground black pepper until well combined. Set aside for the flavors to meld.
  • In a large bowl, gently mix the ground beef with kosher salt and ground black pepper, being careful not to overwork the meat.
  • Divide the beef into six equal portions, shaping each portion into thick patties, about ½-inch thick.

Cooking

  • Heat a skillet or griddle over medium-high heat. When it’s hot, place the burger patties in the pan, smashing each patty down with a spatula. Cook for about 3 minutes or until the bottom is browned.
  • Flip the patties, add a slice of cheese on top of each, and cook for another 2 minutes, or until the cheese has melted.
  • While the burgers cook, warm the tortillas in a separate skillet for about 30 seconds on each side until pliable.

Assembly

  • Layer the bottom of each tortilla with shredded lettuce, place a cheesy smash burger patty on top, and finish with a drizzle of burger sauce, pickles, and any additional toppings.

Serving

  • Serve the Smash Burger Tacos immediately while they are hot.

Notes

Store leftovers separately in airtight containers. Burger patties will keep for 3-4 days in the fridge. Reheat patties in a skillet for a fresh taste.
