Preparation

  • In a bowl, combine the drained chickpeas and gently mash them with a fork until they’re partially broken down, leaving some texture for crunch.
  • Cut your ripe avocado in half, discard the pit, and scoop it into the bowl with the chickpeas. Mash them together until combined but still a bit chunky.
  • Add lemon juice, salt, pepper, and any optional add-ins you choose. Mix well to ensure the flavors meld together beautifully.
  • Toast or lightly grill your bread slices if desired. This adds a lovely crunch and enhances the flavor.
  • Generously layer the smashed avocado and chickpea mixture onto one slice of bread. Top it off with the second slice and press gently to hold everything together.
  • Cut your sandwich in half for easier handling and enjoy alongside your favorite sides, like a simple salad or some crispy vegetable chips.

Notes

To prevent browning, keep the avocado mixture tightly sealed in the refrigerator and add a bit of lemon juice before storing. This sandwich is versatile and can be served in a wrap or salad format as well.
