  • 1 small to medium ripe watermelon Choose a sweet, ripe watermelon.
  • 2 tablespoons olive oil or melted coconut oil For brushing the watermelon slices.

Preparation

  • Slice the watermelon into thick wedges (about 1-1.5 inches), leaving the rind on for structure.
  • Brush watermelon slices lightly with olive oil or melted coconut oil and sprinkle with a pinch of sea salt.

Grilling

  • Preheat the gas grill to medium-high heat or let charcoal get nice and hot until covered in ash.
  • Place watermelon slices on the grill grates or in a grilling basket, grilling for about 3-4 minutes on each side until grill marks appear.
  • For an extra flavor burst, drizzle lime juice over the slices or add crumbled feta cheese after grilling.
  • Remove from grill, garnish with fresh herbs or balsamic reduction, and serve immediately.

Notes

Let grilled watermelon rest for a few minutes before serving to let the flavors settle. Experiment with marinades to enhance flavors. It can be served chilled or warm, based on preference.
