- 2 medium zucchini shredded
- 1 cup shredded mozzarella cheese
- ¼ cup grated parmesan cheese
- 1 large egg
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- Cooking spray or olive oil
- Optional: chopped cilantro or dried oregano
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
Shred the zucchini using a box grater. Place the shredded zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
In a large mixing bowl combine the squeezed zucchini, mozzarella cheese, parmesan cheese, egg, garlic powder, onion powder, salt, and black pepper.
Mix well until all ingredients are evenly combined.
Scoop about ¼ cup of the mixture onto the prepared baking sheet.
Flatten each portion into thin circles about 5–6 inches wide, similar to tortilla size.
Bake for 12–15 minutes until the edges become lightly golden and the center is set.
For slightly crisp edges, bake an additional 2–3 minutes.
Remove from the oven and allow the shells to cool for 2–3 minutes.
Carefully lift with a spatula and place on a rack. Once slightly cooled, the shells become flexible and ready to fill.
