Ingredients
  

  • For the Vanilla Cupcakes:
  • 1 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter softened
  • 2 large eggs room temperature
  • ½ cup whole milk room temperature
  • 2 teaspoons vanilla extract
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • For the Pastel Buttercream:
  • 1 cup unsalted butter softened
  • 3 cups powdered sugar
  • 1 –2 tablespoons milk
  • 1 teaspoon vanilla extract
  • Gel food coloring blue, pink, lavender, mint
  • For the Speckled Effect:
  • 1 tablespoon cocoa powder
  • 1 –2 teaspoons vanilla extract or water

Instructions
 

  • Step 1: Prepare the Cupcake Batter
  • Preheat oven to 350°F (175°C).
  • Line a 12-cup muffin pan with cupcake liners.
  • In a large bowl, cream butter and sugar for 2–3 minutes until light and fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in vanilla extract.
  • In a separate bowl, whisk flour, baking powder, and salt.
  • Gradually add dry ingredients to wet ingredients, alternating with milk.
  • Mix just until combined. Do not overmix.
  • Step 2: Bake
  • Fill cupcake liners about ⅔ full.
  • Bake for 18–22 minutes, until tops spring back when lightly pressed.
  • A toothpick inserted should come out clean.
  • Cool completely before frosting.
  • Step 3: Make the Buttercream
  • Beat softened butter until creamy.
  • Gradually add powdered sugar.
  • Add vanilla and milk until smooth and fluffy.
  • Divide into bowls and tint with pastel gel food coloring.
  • Step 4: Frost & Create Speckles
  • Frost cupcakes with a smooth dome shape using a piping bag or spatula.
  • Mix cocoa powder with vanilla extract or water to form a thin liquid.
  • Dip a clean toothbrush into the mixture.
  • Gently flick the bristles over cupcakes to create speckles.
  • Let speckles dry before serving.

  • Use room temperature ingredients for best texture.
  • Do not overmix batter to avoid dense cupcakes.
  • Speckle mixture should be thin for fine splatter, not thick blobs.
