- 8 oz soba noodles
- 2 cups shredded cabbage red, green, or mix
- 1 cup carrots julienned or shredded
- 1 bell pepper thinly sliced
- 3 green onions sliced
- For the Spicy Peanut Sauce
- 1/3 cup creamy natural peanut butter
- 3 tbsp low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 –2 tbsp honey or maple syrup
- 1 –2 tbsp sriracha or chili garlic sauce to taste
- 1 tsp sesame oil
- 1 tbsp olive oil
- 1 clove garlic minced
- 1 tsp fresh ginger grated
- Salt and black pepper to taste

Bring a large pot of water to a boil.
Cook soba noodles according to package directions (usually 4–5 minutes).
Drain and rinse noodles under cold water to stop cooking.

Pour the peanut sauce over the salad.
