  • 8 oz soba noodles
  • 2 cups shredded cabbage red, green, or mix
  • 1 cup carrots julienned or shredded
  • 1 bell pepper thinly sliced
  • 3 green onions sliced
  • For the Spicy Peanut Sauce
  • 1/3 cup creamy natural peanut butter
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 –2 tbsp honey or maple syrup
  • 1 –2 tbsp sriracha or chili garlic sauce to taste
  • 1 tsp sesame oil
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • 1 tsp fresh ginger grated
  • Salt and black pepper to taste
  • Optional Garnish
  • Crushed peanuts
  • Sesame seeds
  • Extra green onions

Instructions
 

  • Bring a large pot of water to a boil.
  • Cook soba noodles according to package directions (usually 4–5 minutes).
  • Drain and rinse noodles under cold water to stop cooking.
  • In a small bowl, whisk together all peanut sauce ingredients until smooth.
  • Add cooked noodles and prepared vegetables to a large mixing bowl.
  • Pour the peanut sauce over the salad.
  • Toss until everything is evenly coated.
  • Let sit for 10 minutes before serving. Garnish as desired.

Notes

  • Rinsing soba noodles with cold water prevents gumminess.
  • If the sauce thickens too much, add 1–2 tablespoons of warm water or lime juice.
  • This salad tastes even better after resting, making it ideal for meal prep.
