  • 1 teaspoon vanilla extract

Crumble Topping Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional) Adds flavor complexity.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine the sliced strawberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss the strawberries to coat them evenly and set aside.
  • In another bowl, mix together the flour, rolled oats, brown sugar, salt, and cinnamon. Add the softened butter and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.

Assembly and Baking

  • Line an 8x8 inch baking pan with parchment paper, leaving some overhang. Press half of the crumble mixture into the bottom of the lined pan to form the base.
  • Pour the strawberry filling over this layer, spreading it evenly. Crumble the remaining topping over the strawberries.
  • Place the assembly in the preheated oven and bake for about 35-40 minutes, or until the top is golden brown and the strawberries are bubbly.

Cooling

  • Once baked, remove from the oven and allow to cool completely. Lift the bars out of the pan using the parchment paper overhang, slice into squares, and serve.

Notes

For variations, consider mixing in other fruits, adding nuts to the topping, or changing the sweetener. Store leftovers in an airtight container for up to 4-5 days or freeze for longer storage.
