Ingredients

Pastry and Filling Ingredients

  • 1 package puff pastry (thawed) Use store-bought for ease.
  • 2 cups fresh strawberries (sliced) Can substitute with other fruits.
  • 1/4 cup sugar Adjust according to sweetness of strawberries.
  • 1 teaspoon vanilla extract
  • 1 egg beaten (for egg wash)
  • Powdered sugar (for dusting, optional)

Instructions

Preparation

  • In a bowl, combine the sliced strawberries with sugar and vanilla extract. Allow them to sit for about 15 minutes until they release some juice.
  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • Lightly flour your work surface and roll out the puff pastry into a thin sheet. You can cut it into squares or rectangles, depending on your desired size.

Filling and Sealing

  • Spoon a generous amount of the strawberry mixture onto one half of each pastry square. Make sure to leave some space around the edges.
  • Fold the other half of the pastry over the filling to create a pocket. Press the edges firmly with a fork to seal them, and poke a couple of holes on top for steam to escape.
  • Brush the tops of the pastries with the beaten egg to achieve that beautiful golden-brown finish during baking.

Baking

  • Place your prepared pastries onto the lined baking sheet and bake for about 20-25 minutes, or until they’re puffed and golden brown.
  • Once baked, let the pastries cool for a few minutes before dusting them with powdered sugar and serving warm.

Notes

Keep the puff pastry cold before rolling for better texture. Don't overfill to prevent explosions during baking.
