Ingredients
  

For the cookies

  • 12 pieces Sugar Wafer Cookies (vanilla, chocolate, or strawberry) Base of the recipe

For the filling

  • 1/2 cup Peanut butter or cream cheese Choose one based on preference
  • a few drops Food coloring Optional for coloring the filling

For the coating and decoration

  • 1 cup Yellow chocolate melts Can use white or colored melts as alternatives
  • 1/4 cup Chocolate sprinkles To represent the pencil tip
  • 1/4 cup Mini chocolate chips For decoration

Instructions
 

Preparation

  • In a bowl, combine your choice of peanut butter or cream cheese with a few drops of food coloring (if desired). Mix until smooth and well blended.
  • Lay out the sugar wafer cookies on a flat surface.

Assembly

  • Spread about a teaspoon of your creamy filling onto one sugar wafer and place another wafer on top, creating a cookie 'sandwich'. Repeat this process until all wafers and filling are used.

Coating

  • In a microwave-safe bowl, melt the yellow chocolate in 15-second intervals, stirring well between each interval until completely melted.
  • Dip each cookie sandwich into the melted chocolate, ensuring it is fully coated. Allow any excess chocolate to drip back into the bowl.

Decoration

  • While the chocolate is still wet, sprinkle chocolate sprinkles on the tip and place mini chocolate chips on the other end for an artistic flair.
  • Place the cookies on wax paper to set. Once the chocolate hardens, your Sugar Wafer Pencil Cookies are ready to serve.

Notes

Ensure chocolate is smooth when melting to avoid clumps. Use a piping bag for easier filling application.
