Ingredients
  

  • 4 salmon fillets about 6 oz each
  • 1 cup fresh pineapple chunks
  • 1 tablespoon olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon pineapple juice
  • 1 teaspoon chili flakes
  • 2 cloves garlic minced
  • 1 teaspoon grated ginger
  • Salt and black pepper to taste
  • 1 tablespoon lime juice optional
  • Sliced green onions for garnish

Instructions
 

  • Pat the salmon fillets dry with paper towels and season both sides with salt and black pepper.
  • In a small bowl, whisk together soy sauce, honey, pineapple juice, garlic, ginger, and chili flakes to create the sauce.
  • Heat olive oil in a large skillet over medium heat.
  • Place the salmon fillets skin-side down and cook for 4–5 minutes until the bottom becomes golden and slightly crisp.
  • Carefully flip the salmon fillets.
  • Add the pineapple chunks to the skillet around the salmon.
  • Pour the prepared sweet and spicy sauce over the salmon and pineapple.
  • Let the sauce simmer for another 4–5 minutes, spooning it occasionally over the salmon as it thickens slightly.
  • Cook until the salmon flakes easily with a fork and the center is opaque.
  • Remove from heat and let the salmon rest for 2 minutes.
  • Garnish with green onions and a squeeze of fresh lime juice before serving.

  • Patting the salmon dry helps create a golden crust while cooking.
  • Avoid overcooking salmon to keep it moist and tender.
  • Fresh pineapple gives the sauce a brighter, sweeter flavor, but drained canned pineapple can also be used.
  • If the sauce becomes too thick, add a small splash of water or pineapple juice.
