Main Ingredients

  • 2 pieces Flour tortillas Use large tortillas for best results.
  • 8 ounces Steak (cooked and sliced) Ribeye or sirloin recommended for flavor.
  • 1 cup Shredded cheese (cheddar or a blend) A blend adds more flavor.
  • 1 tablespoon Cooking oil or butter For cooking the quesadilla.

Optional Toppings

  • to taste Sour cream Optional, for serving.
  • to taste Salsa Optional, for serving.

Preparation

  • If starting with raw steak, season it with garlic powder, onion powder, paprika, and a pinch of salt. Grill or pan-fry the steak to your desired doneness, allowing it to rest before slicing it into thin strips.

Cooking

  • In a skillet over medium heat, add the cooking oil or butter.
  • Place one flour tortilla in the skillet. Sprinkle a generous amount of shredded cheese over half of the tortilla, then layer on the sliced steak. Add any additional toppings if desired.
  • Fold the tortilla over the fillings to create a half-moon shape. Cook for about 3–4 minutes on one side until golden brown, then carefully flip and cook for another 3–4 minutes.
  • Once both sides are crispy and the cheese has melted, remove the quesadilla from the skillet. Cut into wedges and serve with sour cream and salsa on the side.

Notes

Choose a good cut of steak like ribeye or sirloin for more flavor. Customize the heat by adding hot sauce or crushed red pepper flakes. Avoid overstuffing to prevent spills during cooking.
