  • 1 cup uncooked jasmine or brown rice
  • 1 red bell pepper thinly sliced
  • 1 cup shredded carrots
  • 1 cup steamed broccoli optional
  • 1 avocado sliced (optional topping)
  • Sauce & Flavor Base:
  • ½ cup teriyaki sauce store-bought or homemade
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon fresh grated ginger
  • 1 tablespoon olive oil for roasting
  • Pantry & Garnish:
  • Salt and black pepper to taste
  • Sesame seeds
  • Sliced green onions

Instructions
 

  • Preheat & Prep:
  • Preheat oven to 425°F. Line a large baking sheet with parchment paper.
  • Toss cauliflower florets with olive oil, salt, and pepper. Spread in a single layer without overcrowding.
  • Cook Rice:
  • Prepare jasmine or brown rice according to package instructions.
  • Roast Cauliflower:
  • Roast for 25–30 minutes, flipping halfway through, until golden brown and crisp on edges.
  • Make Teriyaki Sauce:
  • In a small skillet, warm sesame oil over medium heat.
  • Add garlic and ginger; cook for 1 minute until fragrant.
  • Stir in teriyaki sauce and soy sauce. Simmer for 2–3 minutes.
  • Coat Cauliflower:
  • Transfer roasted cauliflower to a large bowl.
  • Pour warm teriyaki sauce over and toss gently to coat evenly. Let sit for 2–3 minutes.
  • Assemble Bowls:
  • Add rice to serving bowls.
  • Top with teriyaki cauliflower.
  • Arrange bell peppers, carrots, broccoli, and avocado around the bowl.
  • Garnish with sesame seeds and green onions.
  • Serve:
  • Serve warm with extra sauce if desired.

  • Dry cauliflower thoroughly before roasting for better browning.
