  • 1 ½ cups fresh peaches diced (about 2 medium peaches)
  • 1 ¾ cups all-purpose flour
  • ¾ cup organic cane sugar
  • 1 cup unsweetened almond milk or any plant milk
  • cup neutral oil vegetable oil or melted coconut oil

  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon optional

  • ¼ cup chopped walnuts or pecans
  • ¼ teaspoon almond extract
  • Coarse sugar for topping

Instructions
 

  • Preheat Oven
  • Preheat oven to 375°F (190°C).
  • Line a 12-cup muffin tin with paper liners.
  • Prepare Peaches
  • Dice peaches and gently pat dry with paper towels to remove excess moisture.
  • Mix Dry Ingredients
  • In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  • Mix Wet Ingredients
  • In a separate bowl, whisk sugar, almond milk, oil, and vanilla extract until combined.
  • Combine Batter
  • Pour wet ingredients into dry ingredients.
  • Stir gently until just combined. Do not overmix.
  • Fold in diced peaches carefully.
  • Fill Muffin Tin
  • Divide batter evenly among muffin cups, filling about ¾ full.
  • Sprinkle coarse sugar on top if desired.
  • Bake
  • Bake for 18–22 minutes, or until tops are golden and a toothpick inserted in the center comes out clean.
  • Cool
  • Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
