Ingredients
  

  • 1 ½ cups whole milk ricotta cheese
  • 1 tablespoon olive oil plus extra for drizzling
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh herbs finely chopped (parsley, basil, chives, or a mix)
  • 1 small garlic clove minced (optional)
  • Salt to taste
  • Black pepper to taste

Instructions
 

  • If ricotta is watery, drain in a fine mesh strainer for 15–20 minutes.
  • Zest and juice the lemon.
  • Finely chop fresh herbs.
  • Add ricotta, olive oil, lemon juice, lemon zest, garlic (if using), salt, and pepper to a food processor.
  • Blend for 1–2 minutes until smooth, creamy, and fluffy.
  • Taste and adjust seasoning as needed.
  • Spoon into a shallow serving bowl.
  • Drizzle with olive oil and sprinkle additional fresh herbs on top.
  • Serve immediately or chill for 30 minutes for enhanced flavor.
