- 1 lb boneless skinless chicken breast, cut into bite-size pieces
- 12 oz short pasta penne, rigatoni, or rotini
- ½ cup sun-dried tomatoes oil-packed, drained and sliced
- 1 small onion finely diced
- 3 cloves garlic minced
- 1 tsp Italian seasoning
- ¼ tsp red pepper flakes optional
- Salt and black pepper to taste
- 3 cups chicken broth
- 2 tbsp olive oil
- 1 cup whole milk ricotta cheese
- ½ cup freshly grated parmesan cheese
- Fresh basil or parsley for garnish (optional)
Pat chicken dry and season lightly with salt and black pepper.
Whip ricotta in a bowl or food processor until smooth and airy; set aside.
Heat olive oil in a large pot over medium-high heat.
Add chicken and cook for 4–5 minutes until lightly golden. Remove and set aside.
In the same pot, sauté onion for 2–3 minutes until softened.
Add garlic, Italian seasoning, and red pepper flakes; cook for 30 seconds until fragrant.
Stir in sun-dried tomatoes and uncooked pasta.
Pour in chicken broth and stir well to prevent sticking.
Bring to a boil, then reduce to a simmer.
Cook uncovered for 10–12 minutes, stirring occasionally, until pasta is al dente and liquid is mostly absorbed.
Reduce heat to low and stir in whipped ricotta and parmesan until creamy.
Return chicken to the pot and mix until fully combined.
Taste and adjust seasoning.
Let rest for 2–3 minutes before serving. Garnish if desired.
