  • For the Marinated Tomatoes:
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar or fresh lemon juice
  • 1 small garlic clove minced
  • 1 tablespoon chopped fresh basil
  • Pinch of salt
  • Pinch of red pepper flakes optional
  • Optional for Serving:
  • Extra olive oil for drizzling
  • Flaky sea salt
  • Fresh cracked black pepper

Instructions
 

  • Marinate the Tomatoes
  • In a bowl, combine halved tomatoes, olive oil, balsamic vinegar (or lemon juice), minced garlic, basil, salt, and red pepper flakes.
  • Stir gently and let marinate for at least 10–15 minutes to develop flavor.
  • Whip the Ricotta
  • In a food processor or blender, combine ricotta, olive oil, milk (or cream), salt, and pepper.
  • Blend for 1–2 minutes until smooth, creamy, and fluffy.
  • If too thick, add 1 teaspoon milk at a time until light and spreadable.
  • Toast the Bread
  • Toast bread until golden and crisp.
  • Oven: 400°F for 8–10 minutes
  • Toaster: Medium-high setting
  • Grill pan: 2–3 minutes per side
  • Assemble the Toast
  • Spread a generous layer of whipped ricotta over warm toast.
  • Spoon marinated tomatoes on top (avoid too much liquid).
  • Drizzle with olive oil and sprinkle with flaky salt and cracked pepper.
