Ingredients
  

For the Cupcake Base

  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 0.5 cup milk
  • 1 tsp vanilla extract
  • 1.5 tsp baking powder
  • a pinch salt

For the Cheesecake Filling

  • 8 oz cream cheese, softened
  • 0.5 cup powdered sugar
  • 0.25 cup white chocolate chips, melted
  • 0.5 cup blueberries (fresh or frozen)

For Topping

  • Whipped cream (optional)
  • Additional blueberries for garnish
  • A sprinkle of white chocolate shavings

Preparation

  • Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  • In a mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, combine the flour, baking powder, and salt. Gradually add this to the wet ingredients, alternating with the milk until just combined.

Prepare the Cheesecake Filling

  • In another bowl, whip the cream cheese until smooth.
  • Mix in the powdered sugar and melted white chocolate until fully blended. Gently fold in the blueberries.

Fill the Cupcake Liners

  • Spoon about a tablespoon of cupcake batter into each liner.
  • Follow with a tablespoon of the cheesecake filling, then top with more cupcake batter, aiming for two-thirds full.

Bake

  • Place the filled cupcake pan in the preheated oven and bake for 18–20 minutes.
  • Insert a toothpick to check doneness; it should come out clean from the cupcake base.

Cooling

  • Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Decorate

  • Once cooled, top with whipped cream, additional blueberries, and a sprinkle of white chocolate shavings for the final touch.

Notes

Ensure ingredients are at room temperature for better mixing. Don't overmix to keep cupcakes light. Fresh blueberries are preferred, but frozen are acceptable if not thawed.
