Cooking Steps

  • Add the diced onion to the pot and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Toss in the diced zucchini and corn, continuing to stir for about 5 minutes until they start to soften.
  • Add the vegetable or chicken broth, bringing the mixture to a gentle boil. Once boiling, lower the heat and let it simmer for about 15-20 minutes, allowing the veggies to become tender.
  • If you prefer a smoother texture, use an immersion blender to puree part of the chowder. Alternatively, leave it chunky for a heartier feel.
  • Stir in the heavy cream or milk and season the chowder with salt and pepper to taste. Allow it to heat through for another 5 minutes without boiling.
  • Ladle the chowder into bowls, garnish chopped parsley, and enjoy.

Notes

For best results, use fresh ingredients and customize spices and cream levels to taste. Can be made in advance and reheated.
