  • 1/2 cup bread crumbs Use gluten-free breadcrumbs for a gluten-free option
  • Salt and pepper to taste Don't forget to season adequately

  • Marinara sauce For serving

Preparation

  • Preheat your oven to 400°F (200°C) or your air fryer according to its instructions.
  • Begin by shredding your zucchini. Once shredded, place it in a clean kitchen towel and squeeze out excess moisture to ensure your bites won’t be soggy.
  • In a large bowl, combine the shredded zucchini, minced garlic, Parmesan cheese, fresh herbs, egg, bread crumbs, salt, and pepper. Mix until well combined. You can add some chili flakes for a little heat if desired.
  • Using your hands, scoop out a small amount of the mixture and roll it into balls or form small patties, approximately 1-2 inches in diameter.

Cooking

  • For baking, place the bites on a parchment-lined baking sheet. For air frying, coat the basket lightly with olive oil.
  • Bake the bites for about 20-25 minutes until they are golden brown, or air fry for about 10-15 minutes, flipping halfway through.
  • Once ready, let them cool slightly before serving with marinara sauce for dipping.

Notes

Store leftover bites in an airtight container in the fridge for up to 3-5 days. Reheat in the oven or air fryer to maintain crispiness.
